Tofu for four, grated/shredded/.../frying in a tbsp neutral oil ahead is always a good idea
1 tin toms
Tom paste/passata (optional)
1/3 cp Aldi's crappiest dry white
1 cp veg stock (or the powdered stuff)
1-2 tsp vegemite (or marmite or Bovril if you don't mind that it's meaty)
1/2-1 tsp nutmeg
Pasta for four
Cheese to finish
Instructions
Fry off mirepoix in a little olive oil, add herbs and garlic, add tofu and continue to cook off.
When you're happy with where that's at, add wet things: toms, dry white, stock, vegemite dissolved in 1/2 cp water, nutmeg and season with black pepp.
Start ya pasta water.
Do the pasta.
Finish sauce with pasta water and finish pasta in the sauce.
