Miso "mac and cheese"

  1. Get the pasta going. Reserve a cup of the cooking water.
  2. Cook off 2/3 spronions and garlic in miscellaneous oil. Add corn, pasta water, miso and keep things cooking for a bit.
  3. If you're using silken tofu, schlep that in. Blitz with a stick blender or other blending device. If the consistency is off, add more pasta water.
  4. Return the sauce to the stove. Add pasta and cheese if you're using that. Stir until cheese is melty.
  5. Serve. Garnish with remaining spronions, chilli oil and/or cheese.

Notes

Don't be upset if this looks cursed - it will taste v good. I feel like some steamed broccoli would fit but I've not yet been tempted.
